Today felt like a long day…though it shouldn’t have. I just don’t like afternoon classes. I especially don’t like labs that last close to 3 hours. Bleh. At least its a fun lab though, so I really don’t need to complain. It’s my Experimental Food Science lab! Gosh I am so happy the days of Chemistry and Anatomy and Physiology are over. Phew!
The day started out great with a yummy breakfast made up of a cereal I have never tried until now!
The above delicious breakfast = Barbara’s Shredded Oats Vanilla Almond + almond milk + banana
It was totally satisfying and that cereal is amazing!
I went to school for 2 classes and came home for a break before my afternoon lab. By this time I was hungraaaay and craving an egg sandwich! So that’s what I made…
1 egg + 1 egg white fried with ketchup on a toasted whole wheat English muffin
I didn’t even use a plate, that’s how hungry I was. Is that horrible? Oh well. I didn’t even take the time to look at the picture to realize that my shadow is in it. Is that horrible? Oh well.
And I feasted on a few Dark Chocolate Covered Pomegranate Seeds from TJ’s.
Uhh… they’re almost gone and this is a sad story because the closest Trader Joe’s to Auburn is about 2 hours away!
After lab, I picked up Gunner, my friend Taylor, and her dog Bandit! Park time!!!

Gunner and Bandit frolicked as Taylor and I walked and chatted on the 2 mile trail. When we came home, Gunner was tuckered out, to say the least.
Well, I planned on going to Earth Fare and picking up a piece of salmon for dinner. I was so excited because I got a mobile coupon that was $10 off of a purchase of $25. That’s a great deal! Especially at Earth Fare… I love it there but their prices are crazy! I wish we had Trader Joe’s close by. I drove to Earth Fare only to realize I forgot my phone with my mobile coupon at home. I gave up. Panera Bread is next door and it was calling my name for a “to go” order.
I ordered the “You Pick 2″ which is my normal order. I got the Fuji Apple Chicken Salad and the Vegetable soup with a piece of whole grain baguette.
I’ll use my coupon tomorrow!
Then, it was on to making Kale Chips.
1 bunch of kale
1/4 cup nutritional yeast
1/2 teapsoon garlic powder
1/2 teaspoon salt
1/2 teaspoon paprika
Directions: Preheat oven to 300 degrees F. Remove kale leaves from stems and rip into “chip size” pieces. Spray a large baking pan with cooking spray. Evenly spread the kale out. Spray cooking spray onto the leaves. Sprinkle nutritional yeast, garlic powder, salt and paprika. Toss with fingers until all leaves are coated with seasonings. Bake for 15 minutes. Turn over and bake for an additional 5 minutes, or until crispy.
Embrace the crunch of the kale chips, my friends.
