Banana Shenanigans

Goooood morning! I’m feeling quite bubbly today – so beware of corny statements, jokes, etc.

Last night, I told you guys that I was going to make some banana bread. Well, I did. It’s healthy and delicious.

Banana Bread

3/4 cup whole wheat flour

3/4 cup oat flour (1 cup of oats, ground)

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

3 ripe bananas, mashed

1/3 cup sunflower butter (any nut butter would work)

1/2 cup sugar (I used raw sugar)

1/4 cup brown sugar, packed

2 eggs

1 teaspoon vanilla

Directions: Preheat oven to 350 degrees F. In a small bowl combine the whole wheat flour, oat flour, baking powder, baking soda, salt and cinnamon. In a large bowl combine the mashed bananas, sunflower butter, sugar, brown sugar, eggs, and vanilla. Use an electric mixer to beat until smooth.  Gradually add in the flour. Transfer to a greased loaf pan and bake for 45 -55 minutes, or until a tooth pick is inserted and comes out clean.

My oven happens to be a beast and cooks crazy fast (this isn’t a good thing people, especially when you’re making cookies) so mine only cooked about 45 minutes. Most ovens will probably take a little longer.

Straight outta the oven. You know I ate that slice… and some. I was shocked at how moist this bread came out, considering I used sunflower butter for the fat. It has a great, whole grain texture and a beautiful dark color.

This morning, I was running a little late for my 8 am class so a piece of banana bread it was to go.

I wish I had time to heat it up because to me, its just so much better that way.

A clementine in the library for me, as I wait for my second class at 10. I will go home for lunch and then I have my Experimental Foods lab at 1.

  1. I heat my breads up too! unless they’re crusty they get warmed up in the microwave or toaster oven first so they’re uber fluffy =) love it! just found your blog today! <3
