This week’s quest for more veggies is off to a great start.
After class today, I headed to the gym to complete an upper body workout.
I started off on the elliptical and completed 20 minutes.
Upper Body Workout:
Low Rows: 3 sets, 15 reps
Up Right Rows: 3 sets, 12 reps
Assisted Pull-ups: 3 sets, 10 reps/8 reps/5 reps
Shoulder Press: 3 sets, 12 reps
I finished with 10 minutes of abs and I was out of there!
On to lunch…
I decided to throw together an egg scramble. It’s a great way to incorporate tons of veggies. If you think of a particular food and asked me if it was in this egg scramble, the answer would probably be yes. In the mix went: 1 egg + 1 egg white, onion, green bell pepper, zucchini, tomatoes, black beans, deli turkey, swiss cheese and I topped it all with some avocado. Now read that back to me! Hah!
I grabbed a handful of pretzels afterwards and some non-pictured Dark Chocolate Covered Pomegranate Seeds from TJ’s.

Err… moving on.
I’ve been wanting to make Rutabaga fries for quite some time. When I ran into the supermarket to grab water and bell peppers, I decided to pick one up. The waxy exterior looked me dead in the eye and told me to make fries out of it. I obeyed.
Rutabaga Fries
Ingredients:
1 rutabaga
paprika, to taste
garlic powder, to taste
salt and pepper, to taste
Directions: Preheat oven to 400 degrees F. Peel the exterior layer off of the flesh of the rutabaga. Slice into fry-like shapes. Add spices and toss until evenly coated. Transfer to a baking sheet and arrange into a single layer. Bake for 35 to 40 minutes, flipping them half way through.
YUM! Have you every had rutabagas? I’ve had them boiled but never like this. They are an exciting alternative root vegetable in place of your good ol’ spuds or sweet potatoes. They will definitely become a regularly made dish around here.
I ate all of those before the rest of my dinner was finished cooking. Oops? I was hungry. The rest of dinner included salmon, roasted asparagus, Cucumber and Tomato Salad. For the salmon, I used a family favorite Salmon recipe from The Deen Brothers’ cook book.
Dinner was delish!

That is quite the veggie loaded scramble. Looks delicious! Love those one dish dinners that cram so many nutrients together.

I love watching Bethenny! She’s my fave! I’ve also been wanting to make Rutabaga fries… is it difficult to cut into the Rutabaga?
I actually found it easier than cutting through a sweet potato!
