Good morning! It’s a beautiful Sunday over here, I hope it’s gorgeous where you are, too!
Yesterday I met up with Alyssa for lunch at Bizilia’s Cafe. They have great paninis, wraps and salads. I ordered a delicious panini and took a picture with my Blackberry. I don’t have the picture because shortly afterwards, I went and got an iPhone! I finally jumped on the bandwagon.
When my Blackberry’s buttons started to fall off, I knew it was time.
Last night I stayed in like a hermit and studied a little. I wanted something quick and easy but delicious for dinner. I executed that perfectly. I made some baked sweet potato fries and a vegetable quiche.
Vegetable Quiche
Ingredients:
6 eggs
1/2 cup milk
1/3 cup Parmesan cheese, grated
salt and pepper, to taste
10 ounces frozen spinach, thawed and drained well
1/2 cup grape tomatoes, halved
Directions: Spray an 8-inch pie dish with cooking spray. In a large bowl, combine the eggs, milk, Parmesan cheese, salt and pepper. Stir in the spinach and tomatoes. Transfer to pie dish and bake for 35-40 minutes or until the mixture is set and slightly browned on the top.
I love quiche because it’s a great way to use up anything you have in the fridge. My mom makes the best quiche.
I was craving something sweet after dinner and came up with a quick fix of a Plum Crisp for Two. In my case, it was for one but I will share the recipe soon! The following picture was totally taken with Instagram. You know I downloaded that app right away!
It’s going to be 88 here today. I really want to be laying out by the pool with all of my friends but I need to study for my final tomorrow and that just won’t happen if I lay out.
I’m off to run some errands, walk Gunner and study.
