I spent the day catching up on school work and didn’t even get a workout in. Actually, it’s probably better because my legs are still sore from doing squats yesterday. When your body tells you to rest, you rest!
Lunch
When lunchtime rolled around I was ready for tuna salad. I’ve been eating tons of tuna for lunch lately. I am such a creature of habit!
Tuna, carrots, red onion, lettuce and some mayonnaise. I always love celery but we were all out so I rolled without it.
Sour dough pretzels for scooping!
Later in the afternoon when my mom came home, we took a trip to Trader Joe’s. I haven’t been in like 2 months or something scary like that. TJ’s almond butter is my FAVORITE. I’m a creamy kind of gal…… They were out of creamy. Creamy everything. I’m not kidding. So, I got crunchy but I won’t enjoy it like I would if it were my creamy. I know this seems so silly but I’m an almond butter freak!
Dinner
We picked up a whole wheat pizza dough for a pizza and salad night.
Romaine, baby greens, red onion, olives, feta, and fresh figs. We topped it with a balsamic dressing and it was an awesome salad!
For the pizza, I prepared it using one of my favorite methods. I started by sprinkling corn meal on my pizza pan (I am so authentic haha). Once the dough is formed like I want, I brush the whole thing with olive oil and sprinkle it with Italian seasoning and garlic powder. Then add spoonfuls of ricotta cheese and thin tomato slices. I top it all with mozzarella or provolone and fresh basil.

I ate two slices of the pizza. It was awesome!
After dinner, my parents and I leashed up Gunner for a little neighborhood walk. He was super excited.
