Sweet Potato Pancake

So, since I’ve been M.I.A. for so long, I think I owe a recipe, agreed?

Gunner doesn’t care because he knows he won’t be getting any…

I’ve been loving some pancakes lately, especially Tina’s 3-ingredient pancake. It’s phenomenal – so filling! But, this morning I opted for a different kind o’ pancake. I came up with a Sweet Potato Pancake that knocked my socks off.

Sweet Potato Pancake

Ingredients:

1/3 cup leftover sweet potato

1 egg + 1 egg white

2 tablespoons oat flour

1 tablespoon flaxseed meal

1/4 teaspoon cinnamon

Directions: Combine all ingredients in a food processor or blender. Cook in greased skillet for 3-4 minutes per side. Serve with favorite toppings.

Oh. Yeah. The color turned out beautifully and the texture is really earthy from the ground oats and flax.

I’m hanging out with my grandma today at home…

She’ll be 97 in a few weeks. Isn’t she precious? This lady has given birth to 9 children, is a grandmother to 26 grandchildren and something crazy like 11 great grandchildren. She’s a gem. ;)

I think a run is in store for today. This cool air pumps me up for that!
