Happy Monday!
Come on, it won’t be that bad.
I had a fun-filled weekend and I hope you did, too!
As I mentioned in the last post, my Aunt Maureen and Uncle Bob arrived safely in New York, from Michigan, on Friday. We didn’t see them until late Friday night because they had a rehearsal dinner to attend.
Saturday:
Well, first let’s say I am loving a new oatmeal creation. Here it is!
Ingredients:
1 apple of choice, cored and chopped
1/3 cup unsweetened vanilla almond milk (or milk of choice)
2/3 cup water
1/3 cup oatmeal
1-2 tablespoons ground flax meal
1-2 tablespoons raisins
cinnamon, to taste
sweetener of choice (I used stevia)
1/4 teaspoon vanilla extract
Directions:
Combine apple, almond milk and water in a saucepan and bring to a boil. Add the oatmeal and continuously stir (about 5 minutes). Then, add all remaining ingredients except vanilla extract. Add vanilla extract directly at the end before oats are ready to be served.
I really love the apple in the oatmeal. Obviously, you can top it with anything you want like nut butter, etc. It was a healthy start to the day. I did some school work and then got Gunner leashed up and we headed out for a run. Can we just stop for a second and talk about this dog’s ears? When he runs, or especially when he sees a squirrel on a run, he pins those things completely back and it cracks me up.
He kills me. After our run, it was time to get ready for Jon’s dad and step mom’s party! I went with my parents, my aunt and my uncle. Here’s a picture (an iphone terrible one) of Jon’s dad playing in his band. He’s on the left.
The music was awesome, as always. Jon’s dad is a great musician. He can play about every instrument there is out there and sing. Luckily, my Jon can play the guitar. I really missed him and it stunk not having him there. But, I partied hard for the both of us
Sunday
I prepared my Breakfast Casserole and popped it in the oven. No, I didn’t take a picture but click on the link and check it out! And then, make it. It’s awesome and always a crowd pleaser. After breakfast, we all headed out to my little cousin Kate’s soccer game! OMG. These little ones were so cute. Kate is 6 so I imagine all of these little ones were 5-6.
Kate’s the one in the yellow with the bright cleats getting in the action. My kind of girl. I MISS soccer like so much and we went to a field where there were tons of games going on, including high school girls. I wanted to jump in. I digress…. sigh.
I also played with my little cousin, Morgan. She’s precious!!!
Love.
My fun pretty much ended here. I came home and did school work from 3:30 to 10:30. Bleh, right? My parents, Aunt Maureen and Uncle Bob headed to the wedding they had to go to. Gunner just hopped right in the picture. I swear that dog is human.
My sister’s boyfriend, Matt, got us sushi for dinner. Sooooooo good!!!
