Breakfast
I don’t know what’s happening. It’s colder outside and suddenly I just want cereal for breakfast all of the time? Pallet, what is wrong with you? Cereal it is – Honey Bunches of Oats with Pecan Bunches.
Spin class was in the works for today. However, my buns are sooo sore from yesterday’s Lower Body Mini Circuit. Sorry for the harsh language, people, but they hurt. A good hurt, though. Ya know? I am going to switch my workout plan around and do arms today.
Last night’s dinner was simple but delicious.

Like I said, dinner was simple and delicious but the show stopper was dessert. We have tons of apples that were on their last leg and begging me to make a dessert out of them. I happily obliged.
Apple Crumble
For the apples:
5 cups apples, peeled, and sliced thinly
1/2 lemon, juiced
1 tablespoon whole wheat pastry flour
1 tablespoon granulated sugar
1/2 teaspoon cinnamon
For the crumble:
1/2 cup whole wheat pastry flour
1/4 cup granulated sugar
1/4 cup brown sugar
2 tablespoons rolled oats
1/2 teaspoon cinnamon
4 tablespoons (1/2 stick) butter, cold and cubed
Directions:
Preheat oven to 375 degrees F. For the apples: In a large bowl, combine the apples, lemon juice, flour, sugar and cinnamon. Toss together until apples are evenly coated with the other ingredients. For the crumble: In a separate bowl, combine the flour, sugars, oats, cinnamon and butter. Mix all ingredients and work the butter in using a fork or your hands. It should be slightly crumbly. Using cooking spray, spray an 8” x 8” dish or an 8” pie pan. Evenly transfer the apples to the greased dish and top with crumble topping. Bake for 40 minutes, or until the filling is slightly bubbly and the topping is browned.
My family and I topped ours with ice cream and we were in heaven! This is the perfect fall treat.

I made a crockpot apple crumble a few weeks ago and it was delicious! I topped it with some homemade cinnamon ice cream…so incredible!
Ohhhh my… cinnamon ice cream on top? That sounds to die for!!

i was just about to say that the apple crumble looks amazing and then i saw frhuman’s comment about crockpot apple crumble and i am BLOWN AWAY! i did not know you could create such a masterpiece in a crockpot
I know, I’ve never done it that way but am willing to try! The crockpot is a rock star for sure!
