It’s Friday, folks! Any plans? I actually have exciting plans for the weekend so I’m excited about that.
I was supposed to be productive yesterday with school work but that didn’t go as planned so I’ve parked myself at Starbucks to accomplish some things today! It’s a yucky rainy day here…boooo I hate rainy days! If I didn’t leave my house, I would end up cuddling with Gunner all day. Trust me.

I’ve been into cardio this week. Nothing crazy but more than usual. I went to Jon’s gym yesterday as a guest and completed Julie’s 50 minute treadmill workout. It’s such a winner!
A protein power plate! Cheese egg white omlet with salsa, turkey with mustard and a pear.
It was delish but yesterday’s show stopper meal was definitely dinner.
I broke out my wok and created a Salmon Stir Fry… so good! It is all about the sauce!
It’s worth sharing
For the sauce:
2 tablespoons garlic, minced (3 to 4 cloves)
2 tablespoons fresh ginger, minced
1/2 cup teriyaki sauce
1/4 cup low sodium soy sauce
1 tablespoon rice wine vinegar
2 tablespoons water
2 tablespoons corn starch
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon black peper
For the stir fry:
2 tablespoons oil of choice
1 large onion, roughly diced (about 1 cup)
2 large carrots, peeled and sliced
3 bell peppers, roughly diced (I used 2 red and 1 green)
1 and 1/2 cups snap peas
12 oz. choice of protein (I used salmon, but tofu, chicken, steak, shrimp, etc. would be great, too)
Directions: In a small bowl, combine all ingredients for the sauce and set aside. Heat a wok or large skillet over medium-high heat. Add all of the vegetables except for the snap peas. Cook for 8-10 minutes, tossing the vegetables frequently. Add the snap peas and cook for another 2 minutes. Remove vegetables from wok or skillet and add your protein. Cook until cooked through (depending on what you use). Add the vegetables back in and pour the sauce over everything. Mix together thoroughly and lower heat to low. Let sit for 5 minutes and serve.
I served my stir fry over spaghetti squash but I also made brown rice for whoever wanted that.
Jon and I never ended up carving our pumpkins last night! Darn, maybe some time this weekend!
I headed to the gym this morning and just ran for 20 minutes on the treadmill before doing a little bit of arms, it ended up being about 2.5 miles.
I made a sweet egg scramble with 1 mashed banana, 2 egg whites and a little vanilla extract. I topped it all with some peanut butter.
It was something different and pretty good!
