Today was such a gorgeous day outside and I needed to take advantage of it. I skipped the gym in the morning in order to complete a nice outdoors run with Jon and Gunner.
Breakfast
A delicious egg and cheese sandwich… so good!
Our run was perfect. The weather was so nice and I zoned out on the trail. We completed just under 5 miles in about 35 minutes.
Lunch
Right before we went on our run, I picked up Samantha from the train station. She is in her last semester of nursing school and had her clinical orientation at a hospital in the city today. We stopped at a local pizzeria and I picked up a grilled chicken salad to go. It was enjoyed after our run, along with the non-pictured roll they gave me. They use pizza dough and makes rolls and they are out of this world!
The rest of my afternoon was spent reading for some assignments I have to do this week.
Dinner
Dinner was one we’ve been making for a long time now – one of Rachel Ray’s recipes for Cod with Fennel, Dill and Tomato, roasted potatoes (recipe to come tomorrow) and salad.
Jon and I fiiiiinally carved our pumpkins (or as I say, punnnkins). It was so fun! I seriously love getting the “guts” out of the pumpkin. Is that weird?
We were hard at work…

Oh, and all of that elbow grease required Flourless Peanut Butter Cookies
