Blueberry Pumpkin Muffins

Hey guys! I’ve been in a writing rut this week. I don’t know what’s wrong with me! Maybe it’s the start of school after a busy weekend?

Well, here is a recipe for ya!

If you overdid it on pumpkin in the fall, sorry if this doesn’t appeal to you! I didn’t go too crazy with pumpkin in the fall so it still appeals to me.

Blueberry Pumpkin Muffins

1/3 cup whole wheat flour

1/3 cup almond flour

1 teaspoon baking powder

pinch of salt

2/3 cup pumpkin

1/3 cup brown sugar

2 eggs

1/4 cup canola oil

1 teaspoon vanilla extract

1/2 – 3/4 cup blueberries (depending on how loaded you like your muffins!)

Directions: Preheat oven to 350 degrees. In a small bowl, flours, baking powder and salt. Set aside. In a large bowl, mix together the remaining ingredients except the blueberries. Add the flour to the wet ingredients. Lastly, fold in the blueberries. Divide batter between 12 lined or greased muffin cups. Bake for 25-30 minutes.

  2. I need to make this recipe because I’ve got a whole can of pumpkin in my fridge. I didn’t max out on pumpkin this year mostly because I wasn’t a big fan of the stuff until a year ago. Now I’m loving it, especially pumpkin pie!

  3. We all get into writing ruts, don’t worry! I didn’t OD on pumpkin over the fall so I should try this! I’ve never had it with blueberries too, sounds great.

  8. I do not think that I could ever be maxed out on pumpkin. In fact, I am still working my way through my case of TJ’s pumpkin butter that I stocked up on before it went out of season. Sound ridiculous? Yes. But do I regret the purchase? Absolutely not :) .

  12. Blueberry Pumpkin sounds like an amazing combination! I love pumpkin anything! Even though I eat more than my fair share in the fall, I still love it throughout the year too! I will have to try these :)
